Apple Carrot Salad
1 cup shredded carrots
3 medium apples, washed, cored and diced with skins on
1 tbsp. lemon juice
½ cup raisins
⅛ cup low-fat mayonnaise
Combine all ingredients. Chill thoroughly. Serve on salad greens.
