The digestive process begins when the food we eat and swallow enters the esophagus. As the food moves down the esophagus, muscles at the top open and close automatically to keep food from going down the nearby windpipe and into the lungs. These muscles are called the upper esophageal sphincter or UES. Muscles at the bottom of the esophagus – the lower esophageal sphincter or LES – open automatically to allow food to enter the stomach and then close to keep it there. Once the food is in the stomach, enzymes and acids are released to break it down so the body can use the nutrients.
