Roasted Tofu Recipe

Servings: 4 – 6

Ingredients

  • 1 block of extra firm tofu
  • 1 – 2 tablespoons olive oil
  • 1 tablespoon cornstarch
  • ½ teaspoon salt
  • 1 teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. First, drain the extra fluids from your tofu. Take your tofu out of the package and place on top of a few paper towels or a clean cloth. Place a few pieces of paper towel or another clean cloth on top of the tofu. Let the tofu sit in the towels for about 20 to 30 minutes or until majority of the liquid has been removed. It may be slightly moist but not feel soaked.
  2. Preheat your oven to 400°F.
  3. Slice your tofu into 2 – 3 smaller blocks (about ¾ – 1 inch thick). Then cut the smaller blocks into small cubes that are about ¾ inches.
  4. Carefully put the cubed tofu into a mixing bowl. Add the olive oil and toss the tofu around gently for an even coating of the oil. Sprinkle in the cornstarch, salt, garlic powder and pepper into the tofu. Continue to coat the tofu until each piece is lightly covered.
  5. Line a baking sheet with aluminum foil or parchment paper. Place the tofu spread apart on the lined baking sheet. Place in the preheated oven and bake for 15 to 20 minutes or until tofu looks crispy and golden.

Notes: Add roasted tofu to salads, stir frys, or grain bowls for some protein. This is a great protein choice that can be used for meal prepping. Store in the refrigerator up to 5 days.
