5-Minute Rice and Beans


Note: This recipe is especially for pregnant and breastfeeding women, but it can be a nutritious part of almost anyone's diet. Pregnant and breastfeeding women need to consume extra calories and eat a variety of nutritious foods to contribute to their baby's growth and development.

Prep time: 5 minutes

Ingredients:

  • 1 16-oz. can black beans
  • 1 c. white rice, uncooked
  • 1 12-oz. jar salsa

Directions:

  1. Prepare rice according to package directions.
  2. Drain and rinse the black beans.
  3. Combine salsa, beans, and cooked rice in a microwave-safe bowl.
  4. Microwave on high for 2 minutes or until warm throughout.

Serves: 4
